Owner and Chief Cake Officer (CCO) of Frost Cake Co., Sonya Tsui has been designing modern and sophisticated cakes and pastries for over seven years.

With roots in Toronto, Sonya moved to British Columbia to pursue a Bachelor of Commerce degree with a focus in Entrepreneurship. Her final project required a full business and marketing plan to start a business. Having seen the American metropolitan markets explode with the new trend of cupcakes, Sonya decided to focus her business plan on opening up a cupcake boutique.

As a recent graduate back in Toronto, Sonya put her business plan into action and ventured into the cupcake business. Starting out of her home, Sonya began baking cupcakes for many private and corporate functions. Simultaneously, she landed a full time job at one of Canada’s largest media publishing houses. Being exposed to the likes of many senior editors at Weddingbells magazine, she eventually started to showcase some of her creative works in various editorial spreads.

In early 2010, Sonya worked at the Bonnie Gordon College of Cake Design as the Marketing and Communications manager while continuing to focus on growing her business and advancing from Cupcake Extraordinaire to Master Cake Designer. Keeping one heel forward with the trends, Sonya continues to update her skills by taking classes at the French Pastry School of Chicago and adds new and innovative pastries to her product line regularly.

Sonya has contributed to many charity events, including the Theatre Passe Muraille Gala in 2010 and 2011 and the Sky’s the Limit annual charity event for the last five years. Her cakes have also won “Best Tasting Cake” at the 2009 and 2010 Cake Show in Toronto and have been seen on Slice Networks ‘Party Mamas’.

Artistic expression has always been something that has made me who I am. Through studying and practicing different mediums, it has opened my eyes to a world of no limitations- where my only limit is my imagination.

In 2005, at a young age, I started my business and my hope for what this medium could do surpassed my expectations. Once I saw how much cake was like a canvas I realized that through not only pleasing the eye I could please the palette too.

I am a graduate of the Ontario College of Art and Design, where I have completed my BFA in drawing and painting. I am currently enrolled to attend the French Pastry School in Chicago.

My hope is to merge my passion for fine art and material with my love for sweet confections. I want to allure my audience with the rich history of this art and tickle their taste buds while creating decadent memories.


Beth Appleton

Whimsical Wedding Cakes

Beth found her passion for Wedding Cake Design while planning her own wedding in 2002. It was difficult to find a designer with her sense of Whimsy so she designer her own whimsical cake that her mother made for her.

Since that time Beth taught herself the basics while satisfying her friends and family with cakes for all occasions and decided to take her talents one step further by choosing to learn from Bonnie Gordon, the original Cake Diva!

In addition to her classes at Bonnie's school she has also had the privilege to learn from several winners of the Food Network Cake Challenge, includinh Courtney Clark, Michelle Bommarito and the Sugar Flower King, James Rosselle.

In April Beth was asked to design one of 25 cakes to be displayed at Wedding Bell's magazine 25th Anniversary Party held in Toronto.
